Origin Story

Sometime in 2012 Isaac Sandoval was challenged to design and build the world's largest cast iron skillet. Well, the skillet itself didn't break any world records but people loved the unique menus and crowd pleasers cooked in the giant skillet. Thus began the journey into food and pure wonderment of all things culinary. Isaac and Shawna set up shop in Vegas (NM) as a food truck, and two years ago went full brick and mortar in a historic building downtown. Skillet today is an immersive art, food, and drink experience. 


A Necessary Stop

We serve fine beer, spirits, and cocktails along with ​our fabulous food in a quick service atmosphere. Experience margaritas and tacos on our shaded patio next to the Gallinas Riverwalk.  

Karaoke Night 

Thursday nights at 9 pm, nothing held back for the best night of entertainment since the last time you saw a Village People cover band at the casino. Be ready for lots of local flavor and fun.

With over 900 buildings on the historic register, Las Vegas is a city frozen in the time of its original glory when the railroad arrived in 1880. "Wildest of the Wild West" has been used to describe the town's reputation in the old days, and some say this mystique of the past seems to cling in the air. Today, restaurants and shops occupy many of these marvels of history while the movie makers still use the buildings facades' as a believable portrayal of the old West. Amazing scenery everywhere, we are just minutes from vast wilderness, dramatic canyons, winter sports, and diverse wildlife; Las Vegas attracts people for many reasons and has yet to disappoint.
